Who loves delicata squash?! To be honest, the first time I ever had it was probably a year ago, but I have been hooked since! It's so easy to make and can be a great side dish at your next holiday potluck!
Preheat oven to 425 degrees F.
Slice delicata squash in half and scoop out all the seeds with a spoon. Cut the squash in 1/4 inch half moons.
Place all the slices of the delicata squash in a big bowl and toss with olive oil.
Add the spices (garlic, onion, chili, paprika, salt, and pepper) and brown sugar to the bowl and mix so that every piece is coated with the spices.
Place in a single layer on a aluminum (spray with cooking spray) or parchment paper lined baking tray. Bake for about 30 mins until the edges are have crisped up. Enjoy!
