Samosa Puffs

Directions

Bring a large pot of water to a boil. Add potatoes and boil until fork tender. Drain the potatoes, mash, and set aside.

Heat a large frying pan on medium heat and add oil. Add the onions and garlic and stir fry for a few minutes or until onions are translucent.

Add the broccoli florets and fry for a few minutes. Add the peas and fry for additional minute. Add the madras curry paste and mix well so the curry paste covers all the vegetables.

Add the agave and mix well. Add salt and pepper to taste. Add the cilantro and mix until cilantro has wilted (couple minutes). Add the mashed potatoes and mix everything together. Set aside to cool completely.

Preheat oven at 425 degrees F.

Whisk together 1 egg with 1 tablespoon of water to create an egg wash.

Lay out the puff pastry on a flour surface. Cut into 9 even squares.

Add 1 heaping tablespoon of the samosa mixture to the middle of each square. Brush the perimeter of each square with the egg wash.

Bring together all four corners of the squares together and pinch together so no samosa filling is seen. Place on a parchment lined baking tray with seam side down.

Brush the tops of the samosa puffs with the egg wash. Bake for 20 minutes or until beautifully golden on top. Enjoy!
