Roasted Delicata Squash and Caramelized Onions

I love delicata squash for the sole reason that you don't need to peel it! The skin is very thin and roast perfectly with the squash. It's also just delicious, but with how short the season for it is, you have to hurry and make dishes with it. This Roasted Delicata Squash and Onions requires a few ingredients but is sure to please all your guests at Thanksgiving. Give it a go!

 1 medium Delicata squash (about 1 lb), halved lengthwise, seeds removed, and cut into 1/4-inch thick slices
 1 medium red onions (large slices)
 1 tablespoons avocado oil
 2 garlic cloves (minced)
 1 1/2 tbsp thyme (finely chopped)
 1/2 tsp paprika
 2 tsp maple syrup
 1/2 tsp salt
 1/2 black pepper

Preheat oven to 425 degrees F.

In a large bowl, mix together all the ingredients (delicata squash slices, onion slices, oil, garlic, thyme, paprika, maple syrup, salt and pepper).

Lay the mixed ingredients in a single layer on a baking tray. Bake for 25-30 minutes or until the delicata squash are fork tender. Enjoy on it's own or as a side dish!
