Red Velvet Cream Cheese Filled Cookies

Directions

Combine the cookie dough ingredients together (cake mix, flour, eggs, vegetable oil, and vanilla extract) until well combined.

Wrap cookie dough in plastic wrap and put in the fridge for at least 2 hours.

Combine the cream cheese filling ingredients (cream cheese, powdered sugar, and vanilla extract) until well combined.

In an ice cube tray or flat plate, place 1 heaping teaspoon each of the cream cheese filling in each individual ice box cube or flat plate until all the cream cheese is used up. You want to make sure that the cream cheese balls are not touching each other.

Place the cream cheese filling in the freezer for at least 2 hours.

Preheat oven to 350 degrees F.

Take out the cookie dough and cream cheese filling. Measure out 1/4 cup of the cookie dough and split the 1/4 cup into two balls. Flatten each ball and place one cream cheese filling ball into the center of one of the flattened ball. Take the other flattened ball and cover the cream cheese filling. Roll the cookie dough around the cream cheese filling until no filling is visible.

Place each cream cheese filled cookie dough ball on a parchment lined baking tray making sure to leave at least 3-4 inches of space around the ball. These cookies expand quite a big so you want to make sure not to crowd the baking tray.

Bake cookies for about 10-12 minutes.

Let cookies cool completely before moving them or else the middle will not stay together. Optional, decorate each cookie by melting white chocolate chips in the microwave at 20-30 second intervals. Drizzle each cookie with a fork. Enjoy!
