My last recipe for my Thanksgiving series and it's definitely one of my favorites. Since making these deliciously soft pumpkin spice cookies, it isn't truly a Thanksgiving meal without them on the table! Give these a try and you will be hooked also!
Preheat oven to 350 degrees F.
Cream together the butter, applesauce, and sugar using a stand mixer, handheld mixer, or just a whisk.
Add in the pumpkin puree and egg. Mix well.
Sift together the baking soda, cinnamon powder, pumpkin pie spice, nutmeg, salt, and flours.
Add the dry ingredients in batches to the wet ingredients. Mix just enough so no dry ingredients are visible.
Take 1/4 cup of the cookie mixture and place on a parchment line baking tray. Leave about a couple inches between the cookies since they do expand in the oven.
Bake cookies for 15 minutes.
While cookies are baking, mix the cream cheese, butter, vanilla extract, and milk together until they are well combined and have a slightly runny frosting consistency.
Let the cookies cool for about 5-10 minutes before putting the frosting or any other decorations on to prevent them from melting. Enjoy!
