Need a recipe for a quick dessert at your next fall gathering? Have a cookie exchange? These Pumpkin Snowball Cookies are so easy and fun to make! Perfect for kids as there are no eggs involved. I love making these to give away at my parties!
Preheat over to 375 degrees F.
In a stand mixer, mix together the butter, 1/2 cup of powdered sugar, and vanilla extract until pale yellow and fluffy.
Add the flour, salt, 1 tsp cinnamon powder, and pumpkin pie spice until the mixture comes together. If the mixture is too dry, add a few teaspoons of water (1 tsp at a time until the dough comes together into a ball). Add in the chopped pecans until nuts are completely incorporated in.
Form cookie mixture into 1 tbsp balls and set on a baking tray. Bake for 8-10 minutes until the bottoms of the cookie are nice and golden brown.
Mix together the remaining powdered sugar and cinnamon powder. Drop each cookie into the mixture and completely coat the cookie. Do this once while the cookies are warm and once when they have cookie down. Enjoy!
