Pesto Broccoli Cauliflower Gnocchi

Preheat oven to 350 degrees F.

In a baking tray, place cauliflower gnocchi and spray with a non stick oil spray. Bake cauliflower gnocchi for 10-15 minutes or until nice and golden brown. For an extra crisp, broil for additional 5 minutes.

In a medium pan, add olive oil. Once hot, add all the broccoli florets and saute for 3-5 minutes.

Once the broccoli is nice and vibrant green, add the sun-dried tomatoes. Saute for a few minutes.

Add in the rest of your ingredients (baked gnocchi, pesto, salt, pepper, red pepper flakes, and fresh basil) and mix around until all the cauliflower gnocchi is vovered with the pesto sauce. Enjoy!
