Peppermint Meringue Tree Cookies

Preheat oven 200 degrees F.

Leave out eggs for at least 30 mins to reach room temperature. Separate out the egg whites. Whisk the egg whites for a few minutes with a mixer until they are frothy and soft peaks form when you lift up the whisk.

Sift the powdered sugar. Add half the powdered sugar to the egg whites, little at a time. Whisk at high speed until firm peaks form. When you lift up the whisk, your batter will form a peak that stays up.

Add about 1/4 tsp of green food coloring until you have achieved a light green color.

Fold in the other half of the powdered sugar until everything is well mixed. Make sure to not over mix, just fold enough to where no dry powdered sugar is seen.

Place mixture in a pipping bag fitted with a large (#8) star tip. Pipe the meringue mixture in a swirl motion so that it resembles a tree. Pipe each cookie about an inch apart. They will not expand in the oven. Decorate each cookie with a star sprinkle on top and small sprinkles (red, green, and white to represent ornaments on a tree) all around.

Bake for about 2-2 and half hours, until they are dry to the touch. Turn off oven and leave cookies in the oven for another 1 hour to completely dry. Enjoy!
