If you know me, then you already know that my baking adventure started with meringue cookies back in college. These Peppermint Chocolate Chip Cloud Cookies are a spin on my classic Peppermint Meringue Trees that I shared last year. A perfect combo of chocolate and peppermint. They also satisfy your chocolate chip cookie craving without any guilt! So light and airy, these are perfect for your next cookie exchange!
Preheat oven to 300 degrees F.
In a stand mixer fitted with a whisk, whisk together the egg whites and cream of tartar until they are frothy with soft peaks.
Slowly add the sugar while whisking. Whisk on medium until the mixture is glossy with stiff peaks, about 4-6 minutes. Add in the peppermint extract and the cocoa powder.
Once everything is whisked together, fold in the chocolate chip cookies.
In a parchment lined baking tray, drop couple tablespoon sized drops of the chocolate chip mixture (these do not expand so they can be close to each other). Sprinkle the crushed peppermint candy on top.
Bake for 35-40 minutes or until they are dry to the touch. Enjoy!
