During the summer time I love having a ton of fruits. These Fresh Summer Fruit Rolls is a great way to get all your fruits in a deliciously fun and creative way. I also love the light honey dressing that goes with it in case you have fruits that are on the tarter side. Definitely a must try recipe!
Mix all the ingredients for honey/agave dressing (honey/agave and lime) and set aside.
Dip your rice paper into warm water and let sit for 15-20 seconds. Set on a flat surface and top with a few slices of apple, a few slices of mango, a few slices of strawberries, a few raspberries, a few blueberries, and 2-3 leaves of mint.
Fold the bottom half of the wrapper over the filling, hold the fold in place, tuck in the sides and roll tightly (watch video for example). Enjoy with your honey/agave dressing!
