Who doesn't love a recipe that is full of flavor but take under 25 minutes to make! I sure do! These Cuban Black Beans use canned beans and are perfect top with rice with a side of salsa and avocados! So good and such an easy recipe!

Cuban Black Beans

 1 tbsp avocado oil
 1 medium onion (diced)
 3 garlic cloves (minced)
 ¼ cup red bell pepper (diced)
 1 cup water
 1 bay leaf
 1 tsp salt
 1 tsp black pepper
 ¼ tsp red chili powder
 ¼ tsp cumin powder
 1 tbsp cilantro (chopped)
 1 can black beans (no drained)

Heat oil in a medium sauce pan. Add the onions, garlic, and red bell pepper to the pot and saute for 5-6 minutes.

Add the spices, bay leaf, cilantro, red wine vinegar, and water. Bring to a light simmer and then add the canned black beans.

Simmer the black beans for about 10-15 minutes or until most of the liquid has evaporated. Serve with some rice on top!
