How festive does this cake look?! This Christmas Cranberry Cake is a perfect way to use up those fresh cranberries that you have leftover from the holidays. It's also such a pretty cake to put at your dessert table this holiday season. The combination of the sweet cake with the tart cranberries is perfect!

 2 cups sugar
 3 eggs
 3/4 cup butter (room temperature)
 1 tsp vanilla
 2 cups all-purpose flour
 12 oz fresh cranberries

Preheat oven to 350 degrees F.

In a stand mixer fitted with a whisk or a hand mixer, whisk together the sugar and eggs until the mixture has doubled in size and is fluffy and pale yellow.

Add the butter and vanilla to the mixture and whisk well. Fold in the flour just until you no longer see any dry flour making sure to not over mix. Fold in the fresh cranberries.

In a baking pan sprayed with nonstick oil spray, pour your cake batter and spread evenly. Bake for 40-45 minutes or until a toothpick inserted in the middle comes out clean. Enjoy!
