Chickpea Pasta with Zuchinni and Corn

Directions

Boil pasta according to package directions. While cooking move on to next steps. Make sure to reserve some pasta water before draining the pasta.

On medium heat, add oil to a large frying pan. Add in the onions, garlic, and jalapenos. Saute for 5 minutes.

Add in the tomatoes, and saute until tomatoes are nice and melted, about another 5 minutes.

Add in the zucchini and saute for another 5-6 minutes. If the mixture is getting dry, add some reserved pasta water.

Add in the remaining ingredients at this point (marinara sauce, cooked pasta, seasoning) and mix well. If the pasta seems too dry add a little of the reserved pasta water, also taste for salt and pepper at this point. Serve with some freshly chopped basil on top and enjoy!
