Butternut Squash and Green Bean Curry

I wanted to start making and reviewing certain recipes from recipe books that I own. This one is from a the "I Love Trader Joe's Party Cookbook" that I received as a gift since I do love my Trader Joe's! This recipe was good, but lacked flavor that is often associated with Desi cuisine.  I would make it again, but would definitely add more spices!

 8 butternut squash (peeled, deseeded, and cubed)
 2 frozen French green beans
 1 cup canned coconut milk
 2 tsp curry powder
 2 Hatch Valley Fire-Roasted Diced Green Chilles
 salt and pepper to taste

Place the butternut squash and green beans in a medium sauce pan with the coconut milk and bring to a simmer

Simmer the coconut milk for about 10-12 minutes until the butternut squash is fork tender.

Add the curry powder and green chillies to the pot and simmer for another few minutes.

Add salt and pepper to taste. Enjoy!
