Baked Jalapeno Poppers

Directions

Preheat oven to 350 degrees F. Spray a baking tray with non-stick oil spray.

Mix together the cream cheese, Mexican cheese blend, and scallions together until everything is well combined.

Fill each jalapeno with the cream cheese filling.

Mix together the bread crumbs with all the spices (paprika, chili powder, onion powder, garlic powder, salt, and pepper) in a shallow bowl.

Dip each of the filled jalapenos in the egg whites, making sure to let all the excess drip off. Then cover it with the bread crumbs (again shake off any excess) and place on your baking tray. Repeat this will all the jalapenos.

Spray the tops with some nonstick oil spray. Bake in the oven for 20-25 minutes and broil for an additional 4-5 minutes. Tops should be golden brown. Let cool down and enjoy!
