Directions
Preheat oven to 425 degrees F.
On medium heat, add coconut oil to your pan. Add your ground chicken and cook for about 4-5 minutes.
Add your onions and garlic to the pan and fry for a few minutes.
Add your shredded zucchini, bell pepper, and jalapeños to your pan. Make sure to drain all the excess water out your zucchini before adding it to your pan. Add in all your spices (cumin powder, chili powder, salt, and pepper) and fry together for about 5-10 minutes, until there is no liquid at the bottom of your pan. Meat mixture should be completely dry.
Spray your baking tray with some oil spray like Pam. Lay out 6 tortillas on the baking tray (can be slightly overlapping) and spray the tops with the oil spray. Bake in the oven for 2-3 minutes. Repeat the process with the other 6 tortillas.
Fill each of the tortillas with about 1/4 cup of the mixture and 1-2 tbsp of cheese (more if you like!). Roll the tortilla and place on the baking tray seam side down. Spray the tops fo the tortilla with your oil spray.
Bake in the oven for 15-18 minutes and enjoy with a side of sour cream or salsa!
