Baby Potato Salad

I love all the sides that accompany a good BBQ and this Baby Potato Salad has to be one of my favorites. It's light, filling, and full of flavor. I love the crunch from the celery and onions. Definitely, a go to during the summer months!

 5 cups baby potatoes (quartered)
 ½ cup celery (diced)
Salad Dressing
 2 tbsp Veganaise (or regular mayo)
 1 tsp Dijon mustard
 1 tbsp olive oil
 1 tbsp red wine vinegar
 ½ tsp salt
 ½ tsp black pepper
 ½ cup red onions (diced)
 ¼ cup chives

Bring a big pot of water to boil and add the potatoes. Boil for 10 minutes. Drain and set aside to cool completely.

While potatoes are boil, mix together all salad dressing ingredients and let marinade while potatoes are cooking.

Once potatoes are cool, add in the dressing and celery to the potatoes and mix well. Enjoy!
