I absolutely love having dates during Ramadan so I knew I wanted to create a favor idea to give away at my Eid gathering that featured dates. These 4-Ingredient Peanut Butter Date Cookies are so simple and perfect when you are looking for a healthy treat. They are simple and protein packed with a great flavor combo making it okay to have more than one!

 1 cup dates (pitted)
 1 count egg
 1 tsp vanilla extract
 3/4 cup Better'n Peanut Butter

Preheat oven to 350 degrees F.

In a food processor or blender, pulse your pitted dates until they are crumbly.

Add in the egg, vanilla extract, and peanut butter to the food processor or blender. Pulse until mixture is completely combined.

Using a tablespoon measurement, scoop out a tablespoon of the mixture onto your wet hands, place on a parchment line cookie tray, and create a crisscross pattern with a fork by pressing down on the cookie ball. Note: Wet hands prevents the cookie mix from sticking to your hands.

Bake in the oven for 10 mins and enjoy!
