Directions
Preheat oven to 350 degrees F.
In a food processor or blender, pulse your pitted dates until they are crumbly.
Add in the egg, vanilla extract, and peanut butter to the food processor or blender. Pulse until mixture is completely combined.
Using a tablespoon measurement, scoop out a tablespoon of the mixture onto your wet hands, place on a parchment line cookie tray, and create a crisscross pattern with a fork by pressing down on the cookie ball. Note: Wet hands prevents the cookie mix from sticking to your hands.
Bake in the oven for 10 mins and enjoy!
