Mash up your banana until there are no big chunks.
Add in your egg, vanilla extract, and rolled oats to your banana and mix well.
Heat a pan on medium and spray the pan so your pancakes do not stick. If you are using a non-stick pan then you can disregard this step.
Pour your batter into any size pancakes you desire. I used a Nordic small pancake pan and was able to make about 6 very small pancakes. Top each pancakes with nuts (optional) and cook on each side for about 2-3 minute or until golden on both sides. Enjoy with some pure maple syrup!
