I figured it was easy enough to make in the Instant Pot and I was right. This dish was very flavorful, required very few ingredients, and came together very easily! I had it on top of some quinoa for a perfectly balanced dinner! Definitely, recommend my version, not authentic by any means, but still delicious!

However, the slight variations make this curry unique in it's own way. I absolutely loved this Be Siap Mesanten Kare Ayam aka Coconut Chicken Curry! The flavors are so bold and unique that I promise it won't disappoint!
