Directions
Soak dates in warm water for at least 5 minutes.
In a food processor, pulse the almonds until they are a fine powder. Do not over process the almonds or they will turn into almond butter.
Drain and add the dates, cocoa powder, and agave to the food processor. Pulse until everything comes together in your food processor.
Create balls with 1 tablespoon each of the date mixture.
Melt the chocolate on a double broiler or in the microwave. Dip each ball in the chocolate making sure entire ball is covered. Top with blue sprinkles (optional). Place snowballs on parchment paper to dry. Place in the fridge for about 5 to 10 minutes or until they are completely dry and chocolate has hardened. Enjoy!
